Remember my last East vs West post about our hiking adventure? Well we brought a yummy yummy yummy snack with us. So yummy that I had to say yummy three times in a row. Yeah, it's that legit people. I'm on a new mission to make all of our own snacks to not only save a little bit of money but also because it will be so much healthier for both us. So last week's snack baking adventure was making granola bars. And because it's fall they had to have pumpkin in them. And don't be thrown off by the idea of pumpkin and peanut butter in one recipe, 'cause it's delicious. And yummy, remember?
Recipe for: Peanut Butter Pumpkin Granola Bars
1/2 cup peanut butter
1 cup pumpkin puree
2 cups oats (not quick oats)
1/2 cup pepitas (pumpkin seeds)
1/2 cup sunflower seeds
1/2 cup sliced almonds
1 cup brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
1 Tbsp vanilla
1. Combine all ingredients, by hand, in a large mixing bowl.
2. Spread the mixture (it will be fairly moist) into a foil-lined 8x8 or 9x9 pan.
3. Bake at 350 degrees for 22-25 minutes or until toothpick inserted comes out clean. Once done, bars will continue to set as they cool. Do not cut until they are completely cooled or else they'll crumble on you.
Store in the fridge for up to a week or for longer in the freezer.
