Recipe // Oatmeal Pancakes

Oatmeal Pancakes that actually smell like oatmeal cookies? Um, yes, please!!

Folks, I finally have energy to bake now that the baby is outside of me rather than inside of me. Now instead of fighting fatigue in order to bake, the only thing I have to fight is time. I'm still trying to figure out how to find time in between William's feedings to get little things done like showering so baking doesn't always come first when I do have the time. But Mondays are Seth's days off and we now have a system down where I pump during the week so that by the time Sundays and Mondays roll around we have a stock of milk and Seth can give William bottles while I nap or get things done. Today, I got the chance to work on this delicious recipe for oatmeal pancakes.

Who doesn't love pancakes?! I know we love them at our house. Pancakes are grand because we pretty much always have all the ingredients for them on hand so when the fridge is empty, pancakes make the perfect meal; breakfast, lunch, or dinner. These pancakes are healthier than the regular stuff (no added sugar) and they smell like oatmeal cookies. No joke, these smell like my favorite cookies. You can be sure that these are delicious because Seth completely cleaned his plate, which is a rare occasion.

Ingredients:

3/4 cup rolled oats

1 cup all purpose flour

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp cinnamon

1/4 tsp salt

1/4 cup applesauce

2 tsp vanilla

1 egg

4 Tbsp butter, melted and cooled

3/4 cup milk

1/2 Tbsp honey

Directions:

1. Pulse oats in a food processor until coarsely ground. You don't want a flour like consistency - it should still be oatmeal-y.

2. In a large bowl combine ground oats, flour, baking powder, baking soda, cinnamon, and salt. Set aside.

3. In a medium bowl combine applesauce, vanilla, egg, cooled butter, milk, and honey. Be sure that the honey gets mixed in, it likes to sink to the bottom. Add the wet mixture to the dry until well combined.

4. Melt some butter (or use a non-stick spray or oil (coconut oil would be yummy)) in a skillet over medium-high heat. Scoop 1/3 cup of batter and pour into the skillet. Cook until bubbly and then flip. Serve warm. I like to top mine off with some banana slices and honey or you could go traditional with syrup.
