Apple crisp is the ultimate comfort food in the dessert category. Just try to argue with me. It's warm and spicy (not spicy like peppers but spicy like cinnamon) but sweet and delicious. Keeping all that in mind thinking of eating apple crisp over the summer sounds a little heavy to my stomach but I was seriously craving some sort of fruit crisp or cobbler. This Strawberry Apple Crisp was the result of the craving for a sweet, spicy, and warm yet not too heavy fruity dessert.
The addition of strawberries in this dish is perfect. Absolutely perfect. The summer fruit helps add sweetness to balance out the spiciness. This is the perfect dessert for summer evenings and is sure to please everyone (unless they're allergic to strawberries).
For the filling:
4 cups peeled and cubed apple slices
3 cups halved strawberries
3/4 cup all-purpose flour
1/4 cup + 2 Tbsp packed brown sugar
dash of vanilla
1/4 tsp salt
For the topping:
1 1/2 cups old-fashioned rolled oats
1/2 cup packed brown sugar
1/4 cup all-purpose flour
1 tsp cinnamon
7 Tbsp cold butter, cubed
1. Preheat oven to 350°. Grease a 9x13 baking dish with nonstick spray.
2. In a large bowl toss together all the ingredients for the filling. Pour into the greased baking dish.
3. In another bowl, combine oats, brown sugar, and cinnamon. Cut in butter until ingredients have formed a crumbly consistency. Pour the crumb topping on top of the filling, being sure to spread the topping evenly over the dish.
4. Bake, uncovered, at 350° for 25-30 minutes or until topping is golden brown and filling is bubbly.
