How many of you are currently canning or freezing applesauce? I haven't gotten to yet but my mom and I have tentative plans for an applesauce canning day in the next few weeks. Last year we got so tired after a few hours of applesauce making and canning that we quit early and ended up having a ton of apples leftover. I have no doubts that that may happen once again. So if you're like us and have apples leftover from your canning adventure simply because you got tired, I have some alternative apple recipes that don't need canned. Don't waste apples just 'cause you got sleepy people! Instead, make these delicious Apple Spice Oatmeal Cookies.

3/4 cup butter, softened
2/3 cup packed brown sugar
1/3 cup granulated sugar
1/2 tsp vanilla
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1 1/2 tsp baking soda
1 cup all-purpose flour
1/2 cup whole-wheat flour
2 cups old-fashioned rolled oats
2 gala apples, peeled and chopped (~2 cups)
1 cup powdered sugar
dash of nutmeg
1/2 tsp cinnamon
2 Tbsp butter, melted
1/4 cup milk
1/2 tsp vanilla
1. Preheat oven to 350° F and line baking sheets.
2. In a large bowl, cream together butter and sugars. Beat in eggs and vanilla until well blended. Set aside.
3. In another bowl, mix together cinnamon, nutmeg, baking soda, and flours. Add dry mixture to wet. Carefully hand mix in oats. Once oats are incorporated, fold in apples.
4. Drop dough by rounded Tbsp onto baking sheets. Bake for 13-15 minutes, rotating halfway through baking, or until edges are golden brown. Cool on wire cooling racks.
5. While the cookies cool, mix together glaze ingredients until smooth. Once the cookies are mostly cool, drizzle glaze over cookies and allow to set before serving.
