'Tis the season for pumpkins and sweet potatoes, hearty soups and chilis...and here's this girl sharing a recipe for a fresh veggie sandwich. But you have probably already figured out that I'm not quite normal. Amidst those heavy fall dishes, why not break out your veggies and whip up this delicious sandwich, it will be a refreshing change for the season.
One of my favorite food combinations is hummus + cream cheese + cucumbers. And that's in this sandwich. So basically it's my new favorite sandwich.
On a side note that has nothing at all to do with this sandwich, William is growing so much! Last week he went to the doctor for his four month appointment and he weighed 14 lbs 1 oz and a few days later I took him again because he was spitting up and he weighed 14 lbs 2 oz. And it was only like three days apart. And the spitting up was due to acid reflux (which he had as a newborn but then it got better and apparently it's come back) so now he is on Zantac for it and is doing
better. At first I wasn't keen on starting him on medicine so young but the poor thing was spitting up after every meal and gets the worst hiccups, I felt so bad for him and just want him to feel better. Anyway, back to the recipe which is the whole point of the post...
1 toasted whole wheat pocket thin flatbread or pita
1 Tbsp hummus
(our favorite is Hannah Organic Hummus which you find at Costco)
1 Tbsp whipped cream cheese
1-2 slices turkey lunch meat or carved turkey
4-5 thinly sliced red pepper strips
1 Tbsp sliced and quartered cucumber
1/4 cup loosely packed spring mix or spinach
1 tsp grated carrot
1. Toast the pocket flatbread. If it's too long for the toaster you'll just have to carefully flip it upside down halfway through toasting.
2. Spread hummus on one side and cream cheese on the other. Next, place in the turkey, if using, followed by the red pepper strips and cucumber. Finally, Carefully stuff the spring mix with the turkey in the middle and top with the grated carrot.
