Recipe for Sugar 'n Spice Pumpkin Muffins
It's no secret that I love pumpkin anything. All-year round. I have so many pumpkin recipes here on the blog, just a few of my favorites include Pumpkin Oat Cookies, Pumpkin Breakfast Muffins, Pumpkin Sugar Cookies, Pumpkin Spice Popcorn, Pumpkin Bundt Cake, Dairy-Free Pumpkin Whoopie Pies, and Pumpkin Cupcakes with Dark Chocolate Ganache and Cream Cheese Frosting. And today I'm coming at you with @@a new favorite pumpkin recipe, Sugar 'n Spice Pumpkin Muffins.@@
These bad boys have some serious flavor to them and they are light and fluffy, sort of the perfect texture since often pumpkin foods can be heavy or dense. And they are super easy to make, it only takes one bowl!

Most recipes can be made using just one bowl. Just mix up the wet ingredients first and then place the dry ingredients on top and mix after all of the dry ingredients have been placed.
It works for most recipes. The bakery I worked at before having William only had one industrial mixer so this was how we mixed most of the recipes. You just have to be careful not to over mix or you'll get really tough batter.
