I love baked oatmeal, peanut butter, and apple pie, so it seemed only natural to throw them all together into one delicious dish. I made sure that you could taste each of the main ingredients without having one that was too overpowering. The result is really nice, it's not too thick from the peanut butter or too plain from just having apples in it. It's also super easy to make, I whipped it all up in one bowl and used two measuring cups. Then you just throw it into the pan for baking and let it be until it's done. It's really perfect.
I even eat this for snacks and meals other than breakfasts, it's that good. And I like to pretend that it's healthy since there's fruit and then protein from the peanut butter. In reality, there is a good amount of sugar in this dish, but it's totally worth it. Just trust me.
If you're really concerned about the sugar, you could sub fresh cut apples for the apple pie filling, but then there's more. I'm 25 weeks pregnant and I have a two-year-old, the easier, the better.
