I don't know about where you live, but around us it has either been storming or so muggy that you can't breathe when outside. Usually by this time of the year it's storming, yes, but we also experience this mixture of straight up dry heat and intense humidity. It's just all mixed up right now. This is normally when you want to stuff your face with popsicles because it's so hot outside and you just want to be dramatic about it. But instead it's rainy and cloudy. Not quite what I expected when I planned this recipe a few months ago......

Enough small talk. Let's get down to business.

Who doesn't love the combination of chocolate and peanut butter (well my best friend didn't for most of elementary/middle school but that's beside the point because now she does like it)? Add if you add marshmallows into the mix, it's even better. 

Chocolate.

Peanut butter.

Marshmallows.

Chocolate Peanut Butter Marshmallow Ice Cream Sandwiches

Yields:

 1 dozen          

Prep Time:

 15 minutes

 1 hour+

Ingredients

24 graham cracker squares

12 tsp peanut butter (1 tsp/sandwich)

2 cups chocolate ice cream

1 cup mini marshmallows

3/4 cup mini chocolate chips

Directions

1. Before getting the ice cream out, spread 1 tsp of peanut butter on 12 graham cracker squares. Set aside. Place the mini chocolate chips into a shallow bowl and set aside for later use. Place a large plate in the freezer for later use.

2. Soften the ice cream slightly by microwaving it for 10-20 seconds. Scoop 2 cups of ice cream into a large measuring cup. Add in the mini marshmallows and mix until marshmallows are throughout the ice cream. If the ice cream gets too melty during this process, finish mixing and place the measuring cup in the freezer for ten minutes, then continue.

3. Remove the frozen plate from the freezer. Scoop a large spoonful of the ice cream/marshmallow mixture onto the 12 graham cracker squares that do not have peanut butter. Quickly top with the peanut butter graham cracker squares. Dip each side of the ice cream sandwich into the bowl of mini chocolate chips and place the completed sandwich onto the frozen plate. Repeat until you have 12 whole sandwiches. Work quickly or the ice cream will get too melty, but you can place the ice cream mixture into the freezer again to harden it up. 

4. Freeze the sandwiches on the frozen plate for at least an hour, then you can transfer to another container or wrap in parchment. If you stack sandwiches on top of one another, the graham crackers may stick together when freezing.
