Recipe | Pineapple Mint Popsicles
It's officially summer. It's so humid outside that my glasses fog up when I walk out the door and I can't breathe. I love summer over winter but this humidity is just killer. One way to beat those awfully humid days is with a cold treat like this pineapple mint popsicles. They are a slightly healthier alternative to something like a giant bowl of ice cream (although I am going to go eat a giant bowl of ice cream tonight so no judgements here if you are too). There is just a bit of sugar added in (to balance out the tartness of pineapple) but it's mostly pineapple and yogurt. So good.
If you're not a fan of pineapple, you could easily sub out peaches or even strawberries. And to mix it up you could sub in a flavored yogurt like peach yogurt, banana yogurt, or really any yogurt. The best part, these popsicles are
approved so I'm sure other kiddos will enjoy them too!
Pineapple Mint Popsicles
1 1/2 cups pineapple, cubed
1 Tbsp fresh mint leaves, finely chopped
1 cup plain yogurt
1/2 tsp vanilla
1/2 Tbsp granulated sugar
1. Place all ingredients into a food processor or blender and blend until smooth and creamy and there are no major chunks.
2. Pour the mixture into popsicle molds. Chill overnight or for at least five hours.
