Recipe | Summer Cobb Salad
I have more than a slight obsession with bleu cheese.
Like, it's weird.
So anything with bleu cheese is my BFF. And if it were up to me, I would add bleu cheese to everything. It makes everything and anything taste better.
Does anyone else dip their pizza and french fries in bleu cheese dressing?
I'm the only one?.....
Well, you should try it because it's delicious. Like really delicious.
Bleu cheese dressing is 100x better than ranch dressing. It's an on going battle in our house, Seth loves the ranch, and well...you know what I like. At all times there is a bottle of each in our fridge because if one of us doesn't have our favorite on pizza night, you had better watch out.
That's probably enough about bleu cheese. Ya'll are probably like, "Who is this crazy lady obsessing over bleu cheese?! I just want to hear about the salad, yo!"
This salad is inspired by one that I get every time I go to Saladworks. Their cobb salad has tomatoes, hard-boiled eggs, pasta, crispy chicken, bacon, and avocado. The crispy chicken isn't the healthiest and let's just be honest, it's too much work for a salad, so I nixed that and I also used a vegetable rotini instead of their regular pasta
I added in some yellow squash and zucchini to switch it up for summertime.
It is full of sweet and salty flavors and tons of different textures. Guys, it's seriously so good. And top it off with some bleu cheese dressing and you pretty much can't have a better, more filling salad.
Summer Cobb Salad
4-5 cups lettuce
(such as romaine, butterhead, or red leaf)
1 tomato, diced
heaping 1/4 cup hard-boiled eggs, crumbled
1/4 cup cooked bacon, crumbled
1/2 cup yellow squash, quartered
1/2 cup zucchini, quartered
1/2 cup cooked vegetable rotini
Bleu cheese dressing
1. Toss all ingredients, except for dressing, in a large bowl.
2. Place in individual bowls for serving, top with extra bacon and bleu cheese. Serve dressing on the side.
